Slightly nuttier and earthier than white quinoa, with a more dramatic colour on the plate. Holds its shape a little better — great in salads and grain bowls.

• Rinse before cooking to remove bitter coating
• Cook in 2 parts water to 1 part quinoa for 15 minutes
• Works brilliantly in salads where colour matters
